I'd say maybe your hands are a little strong on the grip, causing you to bring the clubhead a little too much on the inside on the backswing.
For a 8 iron also it looks like a long backswing to me. Perhaps shorten it up a bit.
Good luck!

You are fanning the club open in your take-away and coming too far inside, this is probably making you flip your wrists to recover which created the hook.
Work on taking the the club back without rotating your forearms, check the halfway back position that the club shaft is pointing down the target line with the toe pointing upwards or maybe a little shut.
You also seem to be forcing the swing, try using a smoother tempo, easy back-swing, pause at the top and gradually accelerate into the downswing.
This video may help with the take away:

Setup looks OK - good spine angle (bent from the hips, not from the waist or shoulders), weight seems to be closer to heels than toes.
As noted, you're fanning the club open immediately on the takeaway - try "holding the triangle" (chest and arms) start the takeaway by turning your shoulders around your spine.
Not a bad position at the top - shoulders and hips in a classic 90/45 degree position. You're getting across the line because your right arm is floating away from your body. Focus on keeping that right elbow in front of your body and you won't have the club pointing across the line.
Downswing starts nicely with the hips.
Not a bad swing overall, some good fundamental things with some bad fundamental things.

What Brian & Lowpost said is right on the money. I paused your backswing at the (10 sec) point and you can see how far on the inside your takeaway is. At the top of the swing the clubhead is not square to the target as well.
On the plus side, your posture at address is excellent. I think just working on one thing at a time (takeaway) is a great starting point for you. You should then start to see some nice improvement.
Cheers

so do you guys think if i weaken my grip more towards a neutral position it should help with fanning the club on the takeaway?? it feels like with a strong grip it makes me naturally want to fan it like that due to my left arm's position...

Certainly worth a try to weaken it a touch and see what happens.
It certainly seems to me like you're letting the club lead the takeaway (hence very handsy and deep) - think about moving your shoulders around your spine and letting the club 'come along for the ride' - it should solve the "too deep, too early" issue.
