The pro who I take lessons from says that I should always hit off of a tee when I practice, no matter what club I'm using. What are the benifits of hitting off of a tee all the time?

For a beginner it is easier to hit off a tee than off the grass or mat. When I shadow kids on the course for the first tee program, I have them hit every shot off a tee. It builds confidence that they can get the ball in the air.
For high handicappers, this is also a very good practice. For tournament golf this is not allowed but for beginners, it will get you shooting lower faster. After your swing develops start hitting off the grass on better lies then work it to every lie.
You have to find a comfort zone on the course, don't make it more difficult and frustrating in the beginning.
