I seem to remember some of the pros chipping with their drivers in some instances. When should or why would you use a driver for chipping?

It is usually a 3w. It is used when the ball is sitting in the higher grass just off the collar of the green. You use the 3w because it has a smooth wide sole that will not grab the grass like an iron would. You make a putting stroke and the ball will come out with a little hop and run to the hole. Much easier then trying to take a wedge and pop it out with chances of thin skulls that will run the ball off the green, or have it stick in the grass and chilly-dip it where the ball goes 2 inches.
